Explore the Italian culture and history through the universal language of food. Gain first-hand knowledge and understanding through the exploration of deep-rooted regional cuisines and develop an appreciation of the culinary cultures by touring and tasting regional specialties.

  • DAY 1

    • Overnight flight to Rome, Italy (group flight can be booked separately)

  • DAY 2-3: ROME

    Stay 2 nights at a 2-star hotel in Rome

    • Arrival at Rome Fiumicino airtport (FCO)
    • Check-in at the hotel and orientation session by your CEPA On-Site Coordinator
    • Welcome dinner at an Italian restaurant
    • Guided walking tour of Rome to see among others the Pantheon, the Trevi Fountain, the Spanish steps, and many other highlights of the “Eternal City”
    • Cooking class, during which you will prepare a 3-course meal of the regional Roman cuisine

  • DAY 4-7: FLORENCE

    Stay 4 nights at a 3-star hotel in Florence

    • Check-in at the hotel and orientation session by your CEPA On-Site Coordinator
    • Guided walking tour of Florence, including a tour of the Duomo
    • Visit an olive oil mill in Volterra to get an introduction into the culture of olive growing in Tuscany (tasting included)
    • Guided tour of the Mercato Centrale, where vendors sell various primary ingredients of the Tuscan cuisine (tasting included)
    • Visit Eataly Firenze to learn about high-quality Italian products and the true taste of Florence
    • Visit a winery in the Tuscan region, including a tasting, where you will learn about wine production

  • DAY 8-11: BOLOGNA - MODENA - PARMA

    Stay 3 nights at a 3-star hotel in Bologna

    • Check-in at the hotel and orientation session by your CEPA On-Site Coordinator
    • Guided walking food tour of Bologna (incl. tastings)
    • Parmigiano Reggiano Dairy: Observe the morning curd separation, copper cauldrons, and massive brining and aging rooms.
    • Acetaia (Balsamic Vinegar Estate): Discover the incredible aging process behind Traditional Balsamic Vinegar of Modena inside rows of wooden barrels.
    • Visit a Prosciutto di Parma curing facility: Learn about the salt-curing process, temperature controls, and strict legal protections governing genuine Parma ham.
    • Farewell dinner at an Italian restaurant
    • Departure from Bologna Guglielmo Marconi Airport (BLQ)
