Europe is renowned for countless culinary specialties which tantalize the taste buds and warm one’s heart.

This program pursues a passion for regional culinary history and practices. It allows students to gain an insider’s view into the food production of local delicatessens by visiting food producers in two of the most “delectable” European regions: the Alsace in France and the Black Forest in Germany. Additionally, in Paris, students will experience the culinary excellence of the French capital, learn about its gastronomy, local markets, and absorb the French culture at first hand.

DAY 1
- Overnight flight to Frankfurt, Germany (group flight can be booked separately)
DAY 2-3: STRASBOURG
Stay 6 nights at the European Study Center Strasbourg (Château de Pourtalès)
- Arrival at Frankfurt International Airport (FRA)
- Check-in at the Château and orientation session by your CEPA On-Site Coordinator
- Guided walking tour of Strasbourg, focusing on the gourmet delights of the city
- Welcome dinner at a traditional winstub
- Cooking workshop to learn about and cook with regional products
- Visit a typical French “Pâtisserie” to meet with the owner, who will introduce you to the fine art of pastry making in France (tasting included)

DAY 4-5: BLACK FORST - FREIBURG
- Visit a 4- or 5-star hotel in the Black Forest for a behind-the-scenes and kitchen tour as well as a group lunch
- Visit a German brewery in the Black Forest, including a beer tasting and a snack
- Enjoy a free morning in Freiburg to explore the local farmers’ market, a valued shopping area for locals
- Visit a traditional bakery and pâtisserie in Germany to learn how the famous Black Forest Cake is produced (tasting included)
DAY 6-7: STRASBOURG - ALSACE
- Guest lecture on “The French Health System”, e.g. by a dietician or a representative of the Slow Food Movement
- Experience Alsatian specialities such as gingerbread, cheese, traditional biscuits, wine, and more during a “Tasty Trip” through Strasbourg
- Guided bus tour along the famous “Route du Vin” (wine route) with stopovers in small Alsatian villages to learn more about the region’s history and wine production
- Visit an Alsatian winery and one of their vineyards to learn about the production of wine and to taste a selection of Alsatian wines
- Group dinner at a restaurant near Strasbourg to enjoy the traditional Alsatian “Tarte Flambée”, which has a razor-thin dough base and is based on a recipe going back to the mid-1800s

DAY 8-11: PARIS
Stay 3 nights at a 3-star hotel in Paris
- Train tickets from Strasbourg to Paris
- Check-in at the hotel and orientation session by your CEPA On-Site Coordinator
- Boat tour on the famous Bateaux Parisiens to get a first impression of Paris
- Admission to the Musée de l’homme to explore their permanent exhibition “je mange donc je suis”. You will discover the biological, cultural, and ecological aspects of our food.
- Guided tour of La Grande Epicerie with on-site tasting of emblematic products to discover one of Paris’ most famous gastronomy companies, located in a Paris renowned department market building: Le Bon Marché
- Gourmand guided tour of the Opéra, St-Honoré and Madeleine gastronomic Paris through emblematic well-known sites such as Ladurée, Angelina, and new ones such as L’éclair de génie
- Free afternoon in Paris
- Farewell dinner at a French restaurant
- Departure from Paris Charles de Gaulle Airport (CDG)

What’s included in this sample itinerary:
Academic and professional excursions with special presentations • cultural excursions and field trips with local, bilingual guides • entrance fees and reservations • accommodation at the European Study Center Strasbourg (triple or twin rooms for students; single room for the faculty) and in a 3-star hotel (twin rooms for students; single room for the faculty) • daily breakfast • welcome and farewell dinner • 1 additional group lunch and 1 additional group dinner • cooking workshop • local transportation by private bus as needed • train tickets • public transportation passes in Paris (zone 1-3) and Strasbourg • on-site coordinator during excursions • orientation sessions • time to study, instruct, and explore

Explore Italian culture and history through the universal language of food. Gain first-hand knowledge and understanding through the exploration of deep-rooted regional cuisines and develop an appreciation of the culinary cultures by touring and tasting regional specialties.

DAY 1
- Overnight flight to Florence, Italy (group flight can be booked separately)
DAY 2-5: FLORENCE
Stay 3 nights at a 3-star hotel in Florence
- Arrival at Florence Peretola Airport (FLR)
- Check-in at the hotel and orientation session by your CEPA On-Site Coordinator
- Welcome dinner at an Italian restaurant
- Guided tour of the Mercato Centrale, where vendors sell various primary ingredients of the Tuscan cuisine (tasting included)
- Visit Eataly Firenze to learn about high-quality Italian products and the true taste of Florence
- Guided walking tour of Florence, including a tour of the Duomo
- Visit a winery in the Tuscan region, including a tasting, where you will learn about wine production
- Visit an olive oil mill in Volterra to get an introduction into the culture of olive growing in Tuscany (tasting included)

DAY 5-6: ROME
Stay 2 nights at a 2-star hotel in Rome
- Check-in at the hotel and orientation session by your CEPA On-Site Coordinator
- Guided walking tour of Rome to see among others the Pantheon, the Trevi Fountain, the Spanish steps, and many other highlights of the “Eternal City”
- Cooking class, during which you will prepare a 3-course meal of the regional Roman cuisine
DAY 7-8: POMPEII - SORRENTO
Stay 3 nights at a 3-star hotel in Sorrento
- Guided tour of Pompeii, a ruined and partially buried Roman city. It was destroyed and completely buried during a catastrophic eruption of Mount Vesuvius in AD 79 and rediscovered in 1748.
- Check-in at the hotel and orientation session by your CEPA On-Site Coordinator
- Visit a limoncello and cheese factory to learn about the production of the famous limoncello and the mozzarella cheese and to taste some of their specialties
DAY 9-11: CAPRI - ROME
- Round-trip ferry tickets to and from Capri
- Free day on the island of Capri. You may wander through the streets of the historic center of Capri.
Stay 1 night at a 2-star hotel in Rome
- Check-in at the hotel
- Farewell dinner at an Italian restaurant
- Departure from Rome Fiumicino Airport (FCO)

This course provides the opportunity for students to gain an appreciation for the different lifestyle choices and the impact they have on health. Robust discussions exploring the scientific study of health and wellness will focus on epidemiology research, social factors, genetics, and lifestyle choices, and their impact on the prevention or development of chronic conditions.
Students will receive a cross-cultural and historical perspective of various health remedies and practices. Experiences and lessons in this study abroad program will serve to deepen students’ understanding of key health topics as they move forward in their academic and professional fields.

DAY 1
- Overnight flight to Athens, Greece (group flight can be booked separately)
DAY 2-6: ATHENS
- Orientation session by your on-site CEPA coordinator
- Welcome dinner at a Greek restaurant
- Guided tour of the Acropolis, the greatest and finest sanctuary of ancient Athens, dedicated to its patron: the Goddess Athena
- Gourmet walking tour of Athens, in which you will visit various specialty food shops, delicatessens, aromatic bakeries, restaurants, dairies, and spice vendors
- Traditional Greek cooking class coupled with a lesson on the cultural and medicinal bases for the dietary selections
- Visit a winery to learn about the process of wine making (tasting included)
- Visit to a Holistic Health Center
- Day excursion to Aegina

DAY 7-13: HERAKLION
- Optional plane tickets from Athens to Heraklion and return
- Orientation session with your on-site CEPA coordinator in Heraklion
- Guided tour of the archaeological site of Konossos, one of the most important palaces of Minoan civilization and the legendary sear of King Minos
- Guided walking tour of the old central market (1866 street) and the fish market
- Visit a winer, where you will be introduced to Cretan wine heritage and will have the possibility to taste some wines, a selection of Cretan cheeses and other delicacies
- Guided tour of an apiary to learn about Cretan bee farming. Cretan bee hives and apiaries are spread across the island and provide a wide range of honey varietals that mimic the island’s unique geography and wild flora
- Visit an olive oil producer to learn more about olive oil production and the health benefits of naturally derived oils
- Return to Athens
- Farewell group dinner at a Greek restaurant in Athens
